An off day....but redemption was to be had

So with my gigantic zucchini I decided to make chocolate zucchini bread. Thanks to 'Cat' (her blog is in french and I cannot understand one word of it) she pointed me to a recipe to Chocolate zucchini cake. I was originally on the hunt for muffins so I looked for another recipe and found a recipe with great reviews but it seems a little too healthy. So I improvised and combined the two. What could go wrong I thought, and this was probably my first mistake.

I am not a baker nor a recipe maker, I'm just good at following directions. Usually. I should have magnified that strength vs. ending up with what I did. Not only that but mid recipe I realized I didn't have a cheese grater which is a basic kitchen necessity (I guess that wasn't included in half of everything) to finely grate my humongous zucchini. I whipped out every kitchen gadget possible and ended up with plane old zucchini puree from my handy dandy baby food maker. That could have been mistake number two but the doozy or all doozies is coming.

After successfully finishing my batter and had used my cute new little muffin tray from Williams Sonoma, I gave the spoon to Zoom so that he could lick. He immediately said yucky mommy to which I completely ignored because he kept on licking it. He must have liked it right?

When the oven timing dinged (dung)(donged) I was excited to taste the end product. I tasted a cute little chocolate zucchini muffin and knew instantly that something had gone terribly wrong. It was awful and it tasted like 'mole' of which I can't stand one bit. I don't even like true Mexican hot chocolate and as I thought of these things I instantly knew my error. My heart sank! My efforts and anticipation were turned into utter failure.
For those of you that love mole you might have already guessed it. Instead of using cinnamon I had used taco seasoning. YUCKY MOMMY! Because of the sugar they weren't that bad but the thought of using chili powder, oregano, and cumin in my muffins caused for the whole batch to be thrown away. How could I have been so absent minded?

With a little boy wondering where mom's project had gone, I had to make them again. I had used all my butter so the cake option was out. No more combining recipes! I opted for the healthier and better option of plain chocolate zucchini muffins. Amazing how they turned out just like the were supposed to be. Thank goodness my zucchini was so big because I have ample amount to make it again. With that long story....the recipe is as follows. This recipe sure won't disappoint.....and it's healthier than the norm.

Chocolate Chip Zicchini Bread/Muffins

Ingredients:
3/4 cup sugar
3 tablespoons vegetable oil
2 large eggs
1 cup applesauce
2 cups all-purpose flour
2 tablespoons unsweetened cocoa
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups finely shredded zucchini (about 1 medium)
1/2 cup semisweet chocolate chips

Preheat oven to 350°. Place first 3 ingredients in a large bowl; beat with a mixer at low speed until well blended. Stir in applesauce.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 4 ingredients (through salt), stirring well with a whisk. Add flour mixture to sugar mixture, beating just until moist. Stir in the zucchini and chocolate chips. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour for bread and less for muffins or until a wooden pick inserted in center comes out almost clean. Cool in pan 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack.
